For Mark Foley, food has always been a story of place, people, and passion. His journey began in his mother’s kitchen in Blarney, Co. Cork, where the aromas of fresh Irish produce sparked a lifelong love for cooking. After more than a decade working in luxury hotels, large-scale catering, and hospitality ventures across three continents, Mark came to a profound realisation: nowhere compares to Ireland when it comes to food.
He believes Irish produce is among the best in the world, and he has become one of its most passionate champions. From artisan cheesemakers to small-scale farmers, Mark proudly showcases the quality, seasonality, and sustainability of Ireland’s food culture in everything he does. His private catering isn’t just bespoke to each client, it’s also a celebration of the people and producers behind every ingredient. Whether it’s an intimate fine-dining experience, a barbecue with a twist, or a large-scale event, Mark’s food tells a story of Irish excellence.
In May 2025, Mark represented Ireland at the International Chefs Cup in Shanghai, a milestone that underlined his reputation as one of the country’s leading culinary voices. Alongside his extensive professional career, he also draws on strong academic foundations, holding a Master’s in Food Business and Innovation from University College Cork and a degree in Culinary Arts and Business from MTU, credentials that give him a unique ability to combine creativity with strategy at the highest level.
Earlier in his career, Mark also gained experience in Michelin-starred kitchens, refining his skills in precision and excellence, an influence that continues to shape his work today.
